Coffee Parfait


1 ½ cups strong coffee
1/3 cup sugar
½ cup milk
1 envelope gelatine
3 eggs, separated
Pinch of salt
¼ cup cold water
 

Mix coffee, milk and sugar. 

Soak gelatine in cold water for 5 minutes and then add to mixture.

Heat in double boiler. 

Beat egg yolks slightly; add to hot liquid.

Add salt and continue cooking, stirring constantly until thick. 

Remove from heat and add stiffly beaten egg whites.

Pour into wet mold. 

Chill and serve with whipped cream.
