Drunken chicken


One medium size chicken
1 stick butter
1 cup dry white wine
½ lb bacon


Wash chicken well and dry with paper towel.
Rub it with spices inside and outside. Place it in a roasting pan with higher sides.  Turkey roasting pan is ideal.
Melt butter and pour over chicken. Pour the wine into the pan.
Cover with aluminum foil and bake on 350ᴼ for 1 hour and 45 minutes.
Remove foil and lay bacon slices crosswise over chicken. Increase temperature to 400ᴼ. Roast chicken uncovered until bacon is crispy, about 15 - 20 minutes.

Serve it with parsley potatoes.

Stefánia fánk (Stefánia doughnuts)

For doughnuts:
2 ¼ cups flour
2 eggs
2 sticks unsalted butter
¾ cups sugar
1 cup chopped walnuts

For topping:
Confectioners’ sugar
Melted chocolate


Crumble butter with flour. Add all the other ingredients for dough and make a smooth dough.  Make walnut size balls, roll them in flour and place them on a doughnut dish.  Mini cupcake pan with liner is OK to use (I used cookie sheets).

Bake on 350 degrees for 18 to 20 minutes, or until gold in color, remove from baking dish, roll them in confectioners’ sugar, and drop melted chocolate in the middle. (I sometimes press a chocolate kisses on top instead.)
